CASHEW NOODLE SALAD



1 cucumber
2 carrots
1 green bell pepper
1 red bell pepper
1/2 cup green onion
1/2 cup purple cabbage slice
2 cups rice noodles
Red chili flakes and salt to taste
For the dressing

3/4 cup cashews soaked in hot water for 15-30 min.
Drained and added to food processor
3 tablespoons sesame oil
3 tablespoons coconut cream
1 garlic clove
1/3 cup cilantro
1 jalapeño
Blend to perfection
