COLESLAW



1/2 red cabbage finely chopped
1/2 white cabbage finely chopped
1 white onion finely chopped
2 large carrots diced
3 stocks celery diced
For the dressing

1 cup cashews soaked in hot water for 15-30 min.
Drain water and add to food processor
2 tbsp. apple cider vinegar
2 tbsp. olive oil
1 clove garlic
1 serrano pepper
1 lemon squeezed
Salt and pepper to taste
