CREAMY TOMATO PESTO PENNE



Soak 1 cup cashews in hot water 15-30 min.
Drain and add to food processor
Add 1/4 cup Brightland™ Olive Oil
1 garlic clove
1/4 cup cashew milk
Add 2 sprigs fresh oregano
Add 1 tsp. salt
Blend in food processor
Boil Andean Dream™ Gluten-free Penne
Steam kale in 1.5 cups of water on low heat Sauté 1/2 white onion diced in 1/4 cup of Brightland™ Olive Oil on medium-low heat for 7 min.
Add 1 cup grape tomatoes cut in half and sauté for 2 min.
Add fresh oregano
Add creamy cashew pesto
Add kale and pasta
Salt and pepper to taste
