MUNG BEAN SOUP



Sauté in avocado or olive oil
1 bunch celery diced
1 yellow onion diced
4 large carrots diced
2 cloves garlic
Add 1 can (13.5oz.) organic unsweetened coconut cream

Add 1 can (13.5oz.) organic unsweetened coconut milk
1 cup unsweetened cashew milk
2 1/2 cups mung beans
Simmer for 45-60 min.
Stir in 16oz. spinach
Add salt and pepper to taste
Garnish with fresh cilantro
